Mushroom Stuffed Chicken

This one is simple:  Heat oven to 375 degrees

Create a pocket in the side of each chicken breast

Mix together a handful each of chopped onions and mushrooms, and handful of shredded cheese

Stuff each breast with the mixture and close with a toothpick, season both with salt and pepper

Heat a tablespoon of olive oil over medium heat in an oven-proof saute pan large enough for both breasts

Sear both breasts on each side until brown

Sprinkle whatever remaining mushroom mixture on top and place saute pan with chicken in the oven and bake for 15 min.

That’s it!  Don’t forget to let the chicken rest on a cutting board once finished for 5 minutes or so.
